Char Siew Baked Buns

Recipe for CHAR SIEW BAKED BUNS

Ingredients:

Pastry:
American potatoes 300g (peel skin, steamed, mashed & chilled)
Bread flour 400g
Yeast 1.5 tbsp 2 eggs
Sugar 2tbsp / 25g Water 3 tbsp

Filling:
150g/ 5 shallots (diced)
Char siew 400g
Green peas 150g (optional for healthy eating)

Seasoning:
1 tbsp sugar
0.25 tsp veasp(msg)
1 tsp salt 0.5 tbsp sesame oil
Premix 1 tbsp corn flour + 3 tbsp water
150ml water

Procedures:

Pastry:
Mix flour and mashed potato in a electric mixer, use minimun power. Mix yeast, sugar and water together.
Mix egg and oil together.
When the flour and potato start to clump, add in the egg and oil first, then the yeast, sugar and water and continue to mix for 5 minute with medium power. After that, place the dough into a bowl and cover top of the dough with cling wrap and let the dough rise for 45 minutes. Filling: Heat wok with 3tbsp oil. Fry onion till fragrant, add in char siew then green peas in order and fry for a while. Next add all the seasoning in and fry. Let the filling cool down.

Cut the dough into smaller pieces. Take a clump of dough and knead it further till it becomes a firm round ball. To knead, press the palm against the dough and move in a circular motion with the thumb pressing into the dough to shape it into a ball.

Take a ball of dough and roll it flat to a size of the palm. Add about 1.5 tsp of filling onto the dough and seal it up with a pinching motion.

Glaze the buns with mixture of beaten egg white and yolk. Look at our master pieces!

Bake for 20 minutes and ta-da!
